Preparation of the Marinade Sauce

Juicy is how I like baked chicken. After some research into to make the best juicy baked chicken I experimented with this recipe and it was delicious. If you want to make it juicy and full of flavours, then follow this recipe.

Ingredients

Brine

Chicken, salt, sugar, garlic, peppers and water

Chicken Marinade

butter, cooking oil, one large onion, green seasoning, barbecue sauce (optional), mayonnaise, mustard, orange, pineapple,  green or fresh seasoning, hoi-sin sauce (optional), red dry wine (optional)

Small potatoes (optional)

Brine & Direction

Brine chicken over night and leave in refrigerator for best results. I like to prepare my brine with salt, sugar, crushed peppers and garlic – portions depend on the amount of chicken. For a  12 pieces of chicken, you can use 1/2 cup salt, 1/2 cup sugar, 1-4 peppers, 4-7 flesh garlic. Mix the brine ingredients in pot of water (enough water to cover the chicken). After the salt and sugar are dissolved, add the chicken and leave to sit i for a few hours (overnight in the fridge for best results).

Chicken Marinade

Marinaded Chicken Ready for the Oven

Mix the ingredients for the marinade in a bowl. Portions will depend on the amount of chicken. For my portion of chicken (12 pieces), I use one table spoon each of mustard, mayonnaise and barbecue sauce. A dash of red wine, a sprinkle of grated orange skin (to give it a Caribbean zing) and 1/2 tea spoon hoi-sin sauce. Mix all ingredients in a bowl and marinade the chicken  for a few minutes.

Cooking Directions

Preheat your oven at about 180 degrees and grease the baking bowl with butter. Add the chicken to the baking bowl with the small potatoes (optional), some whole peppers and let it bake for about 40 minutes. You can add diced pineapples during the last 20 minutes of the bake-process.

Serving Tip

I like to serve this with steamed long grained rice (basmatie rice). Enjoy!
