You don’t have to wait till’ Christmas for Pepperpot
Here is my Famous Pepperpot Recipe
2lb Goat Meat
3 pieces of Cinnamon sticks
8 cloves of garlic minced
1/4 Cup Sugar
2 table spoons fine thyme leaves
2 table spoons cassava cassareep (from the Rupununi)
4 Small pepper – 2 whole and 2 minced
Salt to taste (1 table spoon)
Water (enough to cover meat in pot)
1-2 inches orange peel (dried and broken into pieces)
Ginger (if you don’t have orange peel)
Wash and prepare meat to the size you like. Salt meat and mixed with the minced garlic and pepper. Add oil to a pot and fry the seasoned meat until water evaporates. Add all other ingredients and add water cover meat in pot.
Simmer for about 2 hours (or until meat softens to your preference).
