Making Sponge Cake Guyanese Style

Ingredients:

  • 1 cup all-purpose flour
  • 4 eggs
  • 1 cup sugar
  • 1 tsp baking powder
  • 3 tbsp melted butter
  • 2 tbsp hot water
  • 1 tsp mixed essence

Method

  1. Preheat oven to 350F and spray a baking pan with non-stick spray or rub butter onto it.
  2. The next step is to cream the butter and sugar; mix them until the sugar has completely dissolved into the butter. You will need to add some water.
  3. Add mixed essence.
  4. Beat eggs using a whisk until frothy.
  5. Stir eggs into the butter mixture.
  6. Add flour and keep stirring.
  7. Add butter to egg mixture and mix.
  8. Pour mixture into baking pan and bake for 40 minutes.

Tip: Check to see if the cake is done by using a toothpick and sticking it into the middle of the cake. If it comes out clean, your cake is done!
