Pick Your Favourite – Guyanese Beef Curry Or Beef Stew?

The sound of the pressure pot whistling is always an exciting sound for many Guyanese. The reason being, is that something good is always behind that sound and by something good we mean something incredibly delicious is being made. A toothsome dish that comes from that pressure pot is what we call beef curry. When you come home to a steaming pot of beef curry it is a pleasant satisfaction. It can be eaten with rice or a nice flaky roti. Another way Guyanese enjoy preparing beef is by stewing it; this is called beef stew or stewed beef. This dish is just as appetizing as the one mentioned first.

What is Beef?

Beef is meat from cattle (ox, cow, bull). This meat is a good source of protein and nutrients. In particular, the skeletal muscle is used, and typically cut into roasts, short ribs or steak (filet mignon, sirloin steak, rump steak, rib steak, rib-eye steak, hanger steak). Some are processed into corned beef or beef jerky. Sometimes the trimmings are mixed with meat from leaner cattle and ground or made into sausages. The beef from older bulls are generally tougher and made into minced beef.

Beef Curry Guyanese Style

Beef Curry

Ingredients:

  • 2 lbs. beef
  • 1 potato
  • 1 1/2 tsp. curry powder
  • 1 tsp. masala
  • 1 tsp. geera, ground
  • green seasoning (pureed onion, garlic, pepper and thyme)
  • 2 stems scallions
  • 2 stems celery
  • 3 stems regular fine thyme
  • 2 wiri wiri pepper
  • salt to taste

Method:

  1.  In a small bowl, add curry powder, ground geera and masala.
  2. Mix together and add water to make a paste.
  3. Heat oil to a pot and cook the paste.
  4. Add beef and salt and allow to cook.
  5. Add potatoes and stir.
  6. Cook until beef is soft.
  7. Remove from heat and serve.

Guyanese Beef Stew Or Stewed Beef

Beef Stew

Ingredients:

  • 2 lbs beef, cut
  • 2 wiri wiri pepper
  • tomato paste
  • 3 stalks eschalot, chopped
  • 3 sprigs celery,  chopped
  • 2 large onions, chopped finely
  • vegetable oil
  • salt to taste
  • water

Method:

  1. In a large bowl, season, beef with salt and pepper. Set aside.
  2. Cut the meat into large cubes.
  3. Heat oil in a pot and brown beef.
  4. Add tomato paste, onions, eschalot celery and sautee.
  5. Pour water about halfway over beef and allow to boil on low heat.
  6. When soft, remove from heat and serve.

Tip: You can eat beef stew with rice, roti or even bread.
