Pine tart and cheese roll are two of the most widely distributed and eaten pastries in Guyana. Almost at every snackette, you would find a food case displaying these delicious pastries. They are delicate treats loved by many, a quick snack for children and even adults, just grab and eat on the go. For some though, they enjoy making these scrumptious snacks at home. How do they make it? Read on to find out. But first, what is pastry?

What Is Pastry?

A Pastry is a savoury or sweet delight made with flour, water and shortening like butter. It often requires other ingredients like sugar, milk, baking powder and eggs. The sweet pastries are called bakers’ confectionery. Some of the most common pastries are pasties, patties, croissants, tarts and croissants.

Pine Tart Guyanese Style

Pine tarts are a form of shortcrust pastry. They are made in the shape of triangles with a soft, sweet center of pineapple jam.

Pine Tart

Ingredients For Crust:

  • 1/2 cup butter
  • 1 lb all-purpose flour
  • 2 tsp sugar
  • 1 egg

Ingredients For Filling:

  • 2 small pineapples, peeled diced
  • 1/4 tsp ground nutmeg
  • 1 tsp mixed essence
  • 3 tbsp brown sugar

Method:

  1. Blend pineapple in a blender or food processor.
  2. In a skillet, put pineapple and sugar to boil until the mixture thickens,
  3. In a large bowl, rub butter into flour and knead until the mixture soft.
  4. Separate into balls and flatten to about six inches with a rolling pin.
  5. Scoop some of the pineapple mixture into the middle of the flat dough.
  6. Fold neatly into a triangle and seal the edges with a fork.
  7. Beat the egg and lightly brush over tarts.
  8. Bake for 20 minutes in an oven at 350 °F.

Cheese Roll Guyanese Style

Making Cheese Rolls require a lot of patience and the process is more labour intensive that Pine Tarts. If you’re in a bit of a hurry, you can opt to buy shredded cheese and pie crust instead of making your own.

Cheese Roll

Ingredients:

  • 1 lb flour
  •  1/2 lb margarine
  • 1 egg (beaten)
  • 1/2 lb cheese, grated
  • water, cold
  • black pepper
  • pepper powder
  • pepper sauce

Method:

  1. In a bowl, mix black pepper and pepper powder with the cheese.
  2. In a separate bowl mix butter and margarine and make a dough. Use cold water to mix.
  3. Form the dough in about 15 balls.
  4. With a rolling pin, flatten the ball and add cheese to the middle
  5. Cut the dough into a rectangle and fold in at all four sides.
  6. Brush the rolls with the egg and bake in oven at 275 degrees F for 20-25 mintues.
  7. Allow to cool and enjoy!
